Favourites include the beef picanha with Fati blommaki and nasturtium chimichurri, the Puglia burrata with fennel jam, prosciutto, Dijon, and sesame flatbread, and the salt-baked beetroot, but there’s always something new and novel. She crafts her own paneer, pickles, and dressings with zeal. Her latest lamb dish with kapokbos chermoula, red pimento, and parsnip purrée is a must-try.
