SALON: A new multi-course fine dining journey by Luke Dale Roberts, the culinary visionary behind the renowned restaurant, The Test Kitchen.

The concept of the Journey menu showcases each country that Luke has worked in, focusing on a signature dish from that country’s culinary heritage, with the menu being small focused and interactive. Diners are encouraged to come along on a voyage that shows Luke’s evolution and influences as a chef.

“It takes my decades of travelling, tasting and cooking in some incredible kitchens around the world, and condenses it all into a nine-course exploration of all the wonderful flavours and dishes I’ve encountered along the way,” says Luke.

On the first floor of the silo building in Woodstock’s trendy Old Biscuit Mill, there’s an intimate and sophisticated dining salon adorned with white tablecloths that warm the sexy room. Legendary Luke Dale Roberts and his dedicated, talented head chef Carla Schulze have elevated the offering since opening in April 2023. The Journey menu, a multi-course, inventive epicurean experience of 11 courses, awaits the discerning diner. Add the pioneer or iconic wine pairings courtesy of sommelier Tadiswa Chikwanha, and you’ll have the perfect evening.

Tracing Luke’s impressive global career trajectory from his British roots, the menu transverses Asia to Europe, Latin America to South Africa, his home for nearly 20 years. In Mexico, you might devour the chipotle tuna Caesar paired with a cocktail that marries tequila and jalapeños
perfectly with a kick. A British cheese and pickle sandwich could be followed by a sojourn in France for duck Suzette. The seven-day-aged duck with a citrus emulsion and duck stew is served tableside with a touch more fun than fuss. The Korean beef fillet boasts a heady
flavour combination of mirin tea, ssamjang, kimchi, and ponzu – all vying equally for attention. Return to France for a dessert that pays true tribute, perhaps a madeleine.

Carla is excited about the new additions to the menu that celebrate South African ingredients. Here, tradition is turned on its head. Classics are reinvented and elevated with fun and finesse, à la LDR, a fitting tribute to how the land of opportunity has embraced this talented chef, and how he, in turn, has embraced all that it offers.

    Terrific meal with thoughtful and meticulous global tasting menu. Terrific selection of wines, paired perfectly to each course. Incredibly attentive waitstaff, knowledgeable and friendly. Will be back for the next rendition of the menu.

    From start to finish quite an experience with a personal warm touch by the staff who love what they are doing! Good was innovative, delicious and took you on quite a journey. Special mention to Thulani who is a star! Highly recommended

    It was my second visit, and this time I found the menu too long and the Main Courses too rich. I personally don’t like smoked food and that course didn’t appeal to me. The starters were beautiful and delicious. I would have preferred a “normal “ bread in stead of the beautiful pastry one. I would recommend a choice between the two deserts rather than both. The food looked sublime but the different tastes were overwhelming for me. The restaurant also became a little loud and stuffy as it filled up. Again, I prefer quieter. The staff were fantastic and the service is excellent. The value for the tasting menu is also good. I would recommend the restaurant to foodies or trendsetters who want to enjoy fine dining over 3-4 hours. Salon is definitely trendy. As a group we enjoyed the evening, thanks

    Salon is just a must visit very time we visit CT. The trip around the World with so good flavors. Very good service and nice atmosphere in the restaurant.

    Our first time to Salon. The food was good, service was great but we were seated at the worst table of the restaurant, near the kitchen. We had to adjust to that a bit and of course that has an influence on the total feeling. For us Salon is not yet at the level of the old Test Kitchen, La Colombe or FYN, so there is room to improve. But we enjoyed our evening.
